RECIPES: Masala pork chops with rice, spinach and potatoes

With a chill in the air, this comforting meal will hit the spot:

MASALA PORK CHOPS

  • 2kg pork chops (or any chops you prefer)
  • 3 tsp coriander and cumin mixed powder
  • 2 tbs chilli powder
  • 2 tbs steak and chops spice
  • 3 tsp ginger and garlic paste
  • 1 tbs Robertsons’ rustic garlic and herb spice
  • 1 tsp turmeric
  • 3 tbs olive oil
  • Salt and pepper to taste
  • Spice the pork chops with a mixture of the oil and spices.

You can marinate for a few hours or overnight in the fridge. Grill in a preheated oven at 200°C for ±45 mins or until chops are cooked through.

STIR-FRY RICE

  • 1kg of your favourite frozen stir-fry mix
  • 4 tsp olive oil
  • 1 tbs Robertsons’ rustic garlic and herb spice
  • 1 tbs Robertsons’ spice for roast potatoes
  • 2 cups cooked rice

Heat a large non-stick pan and add 1kg of your favourite frozen stir-fry mix (I used Asian). Cook on the highest heat from frozen, stirring continuously. Once the liquid is almost dried up, add 4 tsp olive oil, 1 tbs each of Robertsons’ rustic garlic and herb spice and Robertsons’ spice for roast potatoes. Continue to stir fry until all the water is dried out. Switch off the stove and add 2 cups of cooked rice. Mix well and serve.

CREAMED SPINACH

  • 1 bunch spinach
  • 1 tsp crushed garlic
  • 2 tbs of flour
  • 2 cups of milk
  • 1 chicken stock cube
  • Salt and pepper to taste

Place 1 bunch of cleaned, cut and washed spinach in a pot with 50ml to 100ml butter (depending on your taste) and 1 tsp crushed garlic. Cook on medium high until water is dried up. Reduce heat to medium and add 2 tbs of flour and mix for a few minutes to cook the flour taste out. Add 2 cups of milk and 1 chicken stock cube (optional), mix well and allow to simmer for ±10 mins. If too thick, add a little more milk until the desired consistency is reached. Season to taste with salt and pepper. It is ready to eat as is but you may add ½ cup fresh cream / 1 disk of feta cheese / ½ cup cottage cheese, if you wish.

ROAST POTATOES

  • 3 medium roasting potatoes
  • 2 tbs olive oil
  • 1 tbs Robertsons’ spice for roast potatoes
  • Salt and pepper to taste

Cover and steam potatoes (peeled and quartered with olive oil) in microwave for 5 mins. Add 1 tbs Robertsons’ spice for roast potatoes and roast in a preheated oven at 220°C for ±10 mins until done to your liking. Season to taste.
