MINCE KEBABS
INGREDIENTS
- 2kg mince
- 2 large onions (finely chopped)
- 1 small bunch mint (finely chopped)
- 2 eggs
- 1 tbs ginger garlic paste
- 1 tbs dhania jeera powder
- 1 tsp garam masala
- 1 tsp turmeric powder
- 1 tbs chili powder
- 5 finely chopped green chillies (optional)
- Salt to taste
METHOD
Mix all the ingredients together, roll in balls and bake in a greased oven tray at 200°C for about 15 minutes, until brown and cooked to your liking.
ONE-MINUTE HUMMUS
INGREDIENTS
- 1 can drained chickpeas
- Juice of 1/2 lime or lemon
- About 1/4 cup olive oil
- 1/4 tsp crushed garlic
- 1/4 tsp celery salt
- 1 tsp Dijon mustard
METHOD
Blitz all the ingredients together until smooth and drizzle with extra olive oil if you prefer. Use a little of the chickpea brine to reach a thick, smooth consistency if required
TZATZIKI
INGREDIENTS
- 1 cup plain yogurt
- 2 tbs mayonnaise
- 1/2 grated English cucumber (all liquid squeezed out)
- Juice and rind of 1/2 lemon or lime
- 1/2 tsp crushed garlic
- 1/2 tsp dhania jeera powder
- A handful of fresh mint (finely chopped)
- Salt and pepper to taste
METHOD
Mix all ingredients together
