MINCE KEBABS
INGREDIENTS

  • 2kg mince
  • 2 large onions (finely chopped)
  • 1 small bunch mint (finely chopped)
  • 2 eggs
  • 1 tbs ginger garlic paste
  • 1 tbs dhania jeera powder
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tbs chili powder
  • 5 finely chopped green chillies (optional)
  • Salt to taste

METHOD
Mix all the ingredients together, roll in balls and bake in a greased oven tray at 200°C for about 15 minutes, until brown and cooked to your liking.

ONE-MINUTE HUMMUS
INGREDIENTS

  • 1 can drained chickpeas
  • Juice of 1/2 lime or lemon
  • About 1/4 cup olive oil
  • 1/4 tsp crushed garlic
  • 1/4 tsp celery salt
  • 1 tsp Dijon mustard

METHOD

Blitz all the ingredients together until smooth and drizzle with extra olive oil if you prefer. Use a little of the chickpea brine to reach a thick, smooth consistency if required

TZATZIKI

INGREDIENTS

  • 1 cup plain yogurt
  • 2 tbs mayonnaise
  • 1/2 grated English cucumber (all liquid squeezed out)
  • Juice and rind of 1/2 lemon or lime
  • 1/2 tsp crushed garlic
  • 1/2 tsp dhania jeera powder
  • A handful of fresh mint (finely chopped)
  • Salt and pepper to taste
