An awesome book landed on #Trending’s desk two weeks ago. Created by the online phenomenon Foodies of South Africa, it’s a collection of the most popular, most scrumptious recipes they have shared on social media. Among them is the cheesy egg toasty, shared 660 000 times on Facebook, and the hash brown breakfast pizza, which attracted 986 850 views. Here’s one recipe you will find inside:

Baked spaghetti pie

Ingredients

. 3/4 pack spaghetti

. 1 tsp Robertsons Atlantic sea salt

. 1 tbsp olive oil

. 1 onion, chopped

. 3 cloves garlic, minced

. 500g beef mince

. 2 tbsp tomato paste

. 1 can crushed tomatoes

. 1 Knorr beef stock pot

. Salt to taste

. 2 tbsp Robertsons Italian herbs

. 3 eggs

. 1 cup grated cheese

. Chopped basil leaves

Method

1. Bring a pot of water to the boil, then add the salt and the spaghetti. Once cooked, strain and set aside.

2. Heat the olive oil in a medium-sized saucepan, and brown the onion together with the garlic.

3. Once the onion is translucent, add the mince and cook until it is browned.

4. Add the tomato paste and crushed tomatoes to the pan and stir to combine.

5. Add the beef stock pot to the mixture and cook for 15 minutes.

6. Season with salt and Italian herbs.

7. Spoon out two cups of the mince and set aside.

8. Add the cooked spaghetti to the remaining mince and stir to combine. Add the eggs to the mixture.

9. Grease a cake tin with butter before adding the spaghetti mixture. Smooth the spaghetti with a spatula before covering with the two cups of reserved mince and the grated cheese.

10. Bake at 180°C for 25 minutes.

11. Garnish with chopped basil leaves and serve.
